Gobi Paneer



Gobhi (cauliflower) or Gobi is the prevalent Indian vegetable cooked on daily basis. Gobhi Paneer is the delicious combination of paneer and gobi in curry form.   

Preparation time: 30-45 minutes

Servings: 2-3 people

Category of dish: Vegetarian

Ingredients:
  • Tomatoes – 2 medium sized pureed
  • Paneer  - 250 grams cubed
  • Cauliflower-1 medium sized
  • Onions – 2 large chopped
  • Bay leaf (Tej Patta)– 1
  •  Ginger-garlic paste – 2 teaspoon
  • Green Chiili-1
  • Coriander powder(Dhania) – 1 teaspoon
  • Garam masala powder – 1/2 teaspoon
  • Red chilli powder – 1/2 teaspoon
  • Coriander leaves for garnish- chopped
  • Turmeric powder – 1 teaspoon
  • Pepper Powder (Kali Mirch)-1/4 teaspoon
  • Clove (Laung)-2-3.
  • Oil- 3 tablespoon
  • Salt to taste


Method:
Take onions, green chilli, tomato and ginger-garlic paste and grind it in mixer to make its paste.
Cut the cauliflower in to small pieces.
Heat oil in pan and add cloves and bay leaf.fry it well.
Add chopped onion and ginger garlic paste (as prepared beforehand). Sauté till it turns brown.
Add Coriander, turmeric, pepper and chilli powder along with garam masala and salt to taste. Add water according to requirement.
Now add Gobi pieces to the cooked paste and mix it well with the spices.
Allow gobi to cook properly on medium flame. Stir the mixture in between.
Add paneer cubes to the above mixture. Paneer cubes can be fried beforehand or can be used raw.
Sprinkle green coriander leaves over the dish to decorate and serve it hot.

Nutritional value:
The dish comprises of various nutritional ingredient like Cottage cheese or paneer rich in calcium, vitamins and proteins. Cauliflower is also a good source of calcium, carbohydrates and vitamin C and K. 

Achari Paneer




As the name suggests achari paneer recipe is a tangy dish with a dash of spices. It is basically pickled gravy cooked along with paneer. It is best served with Indian breads like roti and chapattis in lunch or dinner.

Preparation time: 25 minutes

Servings: 4 persons

Ingredients:
  • Paneer (Cottage cheese) - 250 grams
  • Capsicum - ½ chopped
  • Raw Mango Powder (Amchur) – ½ teaspoon
  • Cumin seeds (Jeera) – ½ teaspoon
  • Garlic- 5 - 6
  • Garam masala – ½ teaspoon
  • Kalonji – ½ teaspoon
  • Dry red chilli - 1
  • Onions – 2
  • Green chilli  - 1
  • Tomatoes - 4
  • Red chilli – 1 teaspoon
  • Bay leaf (tej patta) - 1
  • Oil – 4 tablespoon
  • Mustard seeds – ½ teaspoon
  • Turmeric powder – ½ teaspoon
  • Ginger paste – 1 teaspoon
  • Black pepper powder – ¼ teaspoon
  • salt to taste
  • Any pickle masala without pieces – 1 tablespoon



Method:
  1. Make a paste of ginger, garlic, onion, green chilli and tomato. Keep it aside to use it later.
  2. Heat oil in a pan and fry paneer cubes in it. Fry them till they turn light brown and take them out.
  3. Again take oil in a pan and heat it. Add cumin seeds, mustard seeds, bay leaf, kalonji and dry red chilli. Fry these spices till they start cracking.Now add the mixture we made in first step and cook till the oil separates from corners.
  4. Add red chilli powder, turmeric powder, garam masala powder, pickle, amchur powder, capsicum and salt. Cook and stir the mixture till capsicum becomes tender. Add some water if ingredients started burning.
  5. Add paneer and sprinkle pepper powder in it. Mix well.
  6. Serve hot with chapattis.




Nutritional value:
Kalonji also known as black cumin helps in providing relief from digestive ailments, headaches, asthma and skin infections etc. It also provides a pungent smell to the dish.

Paneer Bhurji


Paneer Bhurji Recipe is a vegetarian substitute of famous Anda Bhurji. It is a mixture of crumbled paneer along with various spices. Paneer Bhurji serves as a great breakfast as well as a dish for lunch and dinner paired with chapattis. It is an easy to make dish which prepares in few minutes.

Preparation time: 20 minutes

Servings: 4 persons

Ingredients:
  • Paneer – 200 grams
  • Cumin seeds (Jeera) – ½ tablespoon
  • Cinnamom (Dalchini) – 1 stick
  • Onion - 1 chopped
  • Ginger – ½ chopped
  • Turmeric (Haldi) powder – ½ tablespoon
  • Cumin (Jeera) powder – ½ tablespoon
  • Coriander (Dhania) powder – 1 teaspoon
  • Red chilli powder – 1 teaspoon
  • Salt for taste
  • Tomato - 2 chopped
  • Green chillies - 2 chopped
  • Coriander leaves chopped
  • Lemon Juice – 1 teaspoon
  • Oil – 1 tablespoon


Method:
  1. Heat oil in a pan; add cumin seeds and cinnamom stick. Sauté till they fry.
  2. Add onion and sauté till it becomes transparent.
  3. Add ginger and other spices like red chilli, cumin powder, coriander powder, turmeric powder and salt.
  4. Add some water to avoid burning of ingredients and mix well.
  5. Now add tomato, and mix well till the mixture leaves oil from sides.
  6. Add crumbled paneer to the cooked mixture and mix well with light hands.
  7. Sprinkle coriander leaves and lemon juice.
  8. Serve hot.


Nutritional value:
Cinnamom, besides being an aromatic Indian spice it also contains many medicinal values. Oil extracted from cinnamom bark is also essential as it contains antiviral properties. According to research cinnamom is also improves glucose in people suffering from type 2 diabetes.

Malai Paneer


Malai Paneer is primarily known for its smooth texture and milky flavour that it leaves at your tongue after taste. It is the most desirable dish in parties, weddings and other ceremonies.

Preparation time: 15-20 minutes 

Servings: 4 people

Category of food: Vegetarian

Ingredients:
  • Paneer (Cottage Cheese) – 400 grams
  • Onions – 2 chopped
  • Ginger garlic paste – 1 teaspoon
  • Thick tomato puree – 1 cup
  • Whole red kashmiri lal mirch – 3 soaked in water
  • Garam masala powder – 1 teaspoon
  • Turmeric – ½ teaspoon
  • Salt to taste
  • Fresh cream – 2 tablespoon (beaten)
  • Milk _ ½ cup
  • Oil – 1 tablespoon
  • Fresh coriander leaves - chopped



Method:
  1. Heat oil in the pan and put ginger garlic paste. Sauté till slight brown.
  2. Now take onion and red chilli and grind it into the fine mixture. Add it to the pan and sauté till raw smell goes away.
  3. Now add tomato puree and mix well till it turns brown.
  4. Add turmeric, salt and garam masala to the mixture and sauté well.
  5. Add milk to the mixture and make it thick gravy.
  6. Now add paneer cubes and turn off the burner.
  7. Add cream to the dish in last step.
  8. Garnish with fresh coriander leaves



Nutritional values:
Paneer and cream are a rich source of calcium. They are useful for persons who suffer from calcium deficiency and disease related to bones.
